Everything But the Fridge Salad

This has become my go-to salad in the summer months! If you love recipes where measurements are required – please be patient with me on this one. I PROMISE you do not need to measure for this salad and every time it is delicious! I first made this because I had some leftover rotisserie chicken and veggies I needed to use up. I hope you enjoy it as much as I do!

Everything But the Fridge Salad

Ingredients
  

  • Protein - rotisserie or grilled chicken
  • Tomatoes
  • Cucumbers
  • Bell Peppers
  • onion
  • quinoa
  • Pickles
  • Avocado
  • Banana Peppers
  • Feta or Mozzarella Cheese
  • Fresh Lemon
  • Fresh Dill
  • Salt & Pepper

Instructions
 

  • Toss all ingredients into a bowl.
  • Squeeze half a lemon over the top of the salad. Garnish with fresh dill, salt, and pepper.
