Crock Pot Whole Seasoned Chicken

This was my first time making a whole chicken in my crock pot. I fell in love with this dinner. It was super simple and it just fell apart as I took it out of the crock pot. It was so tender, full of flavor and everyone approved! That is a win in our home!

Crock Pot Whole Seasoned Chicken

Ingredients

– 1 Tbsp. garlic powder

– 2 tsp. basil

– 2 tsp. oregano

– 1 tsp paprika

-1 tsp cumin

-salt and pepper as desired

-3 celery stocks – cut into pieces

– 2cups carrots – cut into pieces

-1/2 yellow onion chopped

– keep other half of onion (for later)

-6-10 baby red potatoes

– 2 cups organic chicken broth

-1 whole organic chicken

Directions: Combine first 6 ingredients in a small glass bowl to create a dry rub.  Then place celery, carrots, and potatoes in the bottom of your crock pot. Pour chicken broth in crock pot along with adding in the chopped onion. Take half onion and stuff inside the chicken. Rub a small amount of olive oil on your chicken then massage dry rub all over the chicken. Hint: I love to add the rub under the skin. Place your seasoned chicken onto of your veggies. Cook on low for 6 to 8 hours.  Remove chicken, cut into pieces (or it might fall apart) and serve with potatoes and veggies! Enjoy~
