This has become my go-to salad in the summer months! If you love recipes where measurements are required – please be patient with me on this one. I PROMISE you do not need to measure for this salad and every time it is delicious! I first made this because I had some leftover rotisserie chicken and veggies I needed to use up. I hope you enjoy it as much as I do!
Everything But the Fridge Salad
Ingredients
- Protein - rotisserie or grilled chicken
- Tomatoes
- Cucumbers
- Bell Peppers
- onion
- quinoa
- Pickles
- Avocado
- Banana Peppers
- Feta or Mozzarella Cheese
- Fresh Lemon
- Fresh Dill
- Salt & Pepper
Instructions
- Toss all ingredients into a bowl.
- Squeeze half a lemon over the top of the salad. Garnish with fresh dill, salt, and pepper.
