Simple Fish Tacos
I have never made fish tacos until our stay on Maui! I ordered them when we would be out for dinner or lunch. But for some reason I never made them at home. Well Maui inspired me to do so!
If you have tried any of my recipes in the past you know I am all about Simple, easy ingredients.
Ingredients
- 1 piece/person Wild Caught Mahi Mahi Thawed
- STEP 1 - Dry Rub for Fish
- 1 1/2 tablespoon Organic Taco Seasoning
- 1 tsp. Cumin
- 2 tsp. garlic powder
- salt and pepper to taste
- STEP 2 - Baja Sauce
- 1/4 cup Organic Mayo
- 1/4 cup plain greek yogurt
- 1/2 squeezed lime
- 1/4 cup cilantro
- 1 tsp. Cumin
- 1 tsp. garlic powder
- salt and pepper to taste
- STEP 3 - Toppings:
- 2 cup Chopped Purple Cabbage
- 1 pkg. Corn tortillas
- 1 Avocado
- Organic Salsa

- Ingredients you will need for the toppings:
- 2 ccup Chopped Purple Cabbage
- 1 pkg. Corn Tortillas
- 1 Avocado (Mash to create guacamole and squeeze 1/2 lime juice 1 t. taco seasoning, 1 t. garlic power and salt to taste) For simplicity you can purchase already made guacamole.
- Organic Salsa
Instructions
- STEP 1 - Dry Rub for Fish: Mix all seasonings in a plate. Pat down eat piece of fish with a paper towel. Then roll in the dry rub. Place on a cookie sheet and bake at 375 for 20-25 minutes. (or until cooked through). You can also grill your fish. Once cooked thru, shred your fish pieces. While fish is baking prepare the sides.
- STEP 2 - Baja Sauce: Place ingredients in your magic bullet cup or blender. Blend until Smooth. **This is best to make a few hours prior or even the day before. It will become more flavorful.
- STEP 3 - Toppings: Mash avocado to create guacamole by squeeze 1/2 lime juice, 1 tsp. taco seasoning, 1 tsp. garlic power and salt to taste. For simplicity you can purchase ready- made guacamole.
- STEP 4: Serve your Taco. Heat your tortilla on the stove in a pan. Then place tortilla on a plate then spread each Baja Sauce, Salsa, Guacamole and sprinkle the cabbage. Last add your fish! Feel free to squeeze a little extra lime on the top. Then ENJOY~
